The word is transparently formed by adding poly- to unsaturated, even though the chemistry-specific meaning is technical.

Etymology

Polyunsaturated comes from poly- meaning 'many', as in polygon, and unsaturated, where saturated means 'full' so unsaturated means 'not full'. So polyunsaturated describes fats with 'many not-full' spots in their chain, which is why they behave differently from saturated fats and are often thought to be healthier.
