In chemistry the adjective is the negative of 'saturated' (i.e., not fully saturated with hydrogen), so the morphological relation is directly meaningful.

Etymology

The word unsaturated comes from un- 'not' and saturate 'to fill', so in chemistry an unsaturated compound is 'not full' of hydrogen atoms, which leaves extra bonds and changes how the fat or oil behaves.
