The core sense 'be relaxed / adopt an easy attitude' is partly derivable because 'easy' means relaxed/gentle and 'take' can mean 'adopt/assume' (so ‘take it easy’ can be interpreted as 'assume an easy attitude'). Etymology
Take it easy may come from a simple picture of doing things slowly and gently: to take something easy instead of rushing. That's why today take it easy means 'relax and don't worry'.
