Epimorphic comes from the Greek parts epi- 'on' and morph 'form', the same root in metamorphosis. A helpful image is new tissue 'forming on' a wound like a new shape growing on the old one, so epimorphic regeneration is when new parts grow at the injury to rebuild the lost structure.
