Etymology
Roux comes from the French word for 'red' or 'reddish' and from the Latin root russus, and it is related to the English word 'rust'. That's because when fat and flour are cooked together they turn a warm brown or reddish color, so a roux is named for the color it gives to sauces and is used to thicken them.
