Adding -ed to multinucleate is a regular participial/adjectival formation that does not change the core lexical meaning.
Etymology
Multinucleated is made of the parts multi- meaning 'many' and nucleus meaning 'core' or 'center', the same idea you see in nuclear. So, a multinucleated cell has more than one 'core' called a nucleus inside it.
