Kombucha gets its name from the same Japanese parts kombu and cha ('kelp' and 'tea'), but people also use the word for the jelly-like 'mother' of bacteria and yeast that ferments the tea. So calling the culture kombucha makes sense because it is the thing that creates the drink.
