This sense is the literal compound: a board that protects against dashing (splashing), so the meaning follows directly from the parts.

Etymology

Dashboard comes from the old carriage idea: a board put at the front to block mud that 'dashed' up from the wheels. So the original dashboard was simply a shield on horse-drawn carts to protect passengers.
