Formed by prefixing 'un-' to the participial/adjectival 'harvested', giving the regular meaning 'not harvested'.
Etymology
The word unharvested is made from the prefix un- ('not') and harvest, which comes from an old English word for 'autumn' and the time for 'gathering' crops. So unharvested means crops or fruit that were 'not gathered' and are left in the fields.
