Etymology
Ghee comes from India; it comes from the Hindi word ghī and the Sanskrit ghṛta, which means 'clarified butter'. So think of ghee as butter that has been cleaned and cooked until it is pure and rich, and that is why cooks use it to give food a deep, lasting taste.
