Etymology

Chipotle comes from the Mexican language Nahuatl and the old word chilpoctli, made of chil 'chili' and poctli 'smoked'. So a chipotle is a 'smoked chili', which is why it is a dried, smoked jalapeño used for a smoky flavor.
