Morphology

Granny + Smith

This is a proper-name cultivar derived from a person’s name (Granny Smith) rather than a compositional description of an apple; knowing 'granny' (grandmother) and 'Smith' (a surname or occupation) does not indicate a green, tart apple. Cultivar names are essentially arbitrary and language-specific, so a B1 learner who only knows the constituent words would not be able to derive the MWE's meaning.

Etymology

Granny Smith is named after a real woman in Australia. One popular story says an older woman called Maria 'Granny Smith' grew a small apple tree from a seed she found that gave green, tart apples, so today Granny Smith means 'a green, tart apple variety'.
