The meaning is directly and compositionally derived from 'far' (distant) + 'East' (the eastern direction/region): it denotes the lands that lie far to the east. This geographic naming pattern is common across many languages (e.g. Lejano Oriente, 远东/yuǎndōng), so a B1 learner who knows both constituents will readily infer the intended regional meaning.
Etymology
Far East may come from old European maps and travel stories. People in Europe called lands to the 'east' the east, and the places that were very far away became the Far East. That's why today Far East means the 'countries of eastern Asia'.
