This is a regular -ing formation from 'wick', but the moisture-drawing sense is a technical extension that is only partly predictable for many learners.

Etymology

Wicking comes from the idea of a candle wick, which 'draws' wax up the thread to feed the flame. So a wicking fabric 'draws' sweat away from your skin to help keep you dry.
