Etymology
Vindaloo comes from the Portuguese phrase vinha d'alhos, which means 'wine and garlic'. Goan cooks in India changed that wine-and-garlic marinade by adding vinegar and chilies, so a vindaloo today is a very spicy meat and potato curry.
