Morphology
unwatched = watched (transparent) = un + watch + ed
Formed by productive prefixation un- onto 'watched' (watch + -ed); meaning is simple negation of 'watched' and is directly inferable.
Etymology
The word unwatched is made of un- 'not' and watch 'to look after' or 'guard'. So if something is unwatched it is not being looked after or supervised.
