The technical sense uses the same regular morphology: 'un-' negates 'structured', so 'unstructured' means 'not organized according to a predefined model'.
Etymology
Unstructured joins un- ('not') with structure ('an arranged form' or 'a built plan'). In technology it means data that is not in a fixed table or plan, like a pile of emails, images, or recordings, so you need special tools to find the information.
