Processed comes from process, which has the Latin parts pro- 'forward' and cedere 'to go', and you can see the same idea in proceed and procedure. So to process something is to make it 'go forward' through a series of steps, which is why processed foods have been changed by machines or chemicals to make them ready or last longer.
