The word mezcal comes from the Nahuatl word mexcalli, which means 'oven-cooked agave' and comes from metl 'agave' + ixcalli 'cooked'. A helpful way to remember it is that the drink is made by roasting the agave heart in earth ovens, which gives mezcal its smoky taste.
