Johnnycake probably comes from early New England and may be from journey (as in journey cake) or from a Native American word that meant 'corn cake'. A helpful way to remember it is to think of a plain corn pancake you could carry 'on a journey', which is why johnnycake now means a small cornbread cooked on a hot pan.
