The meaning is straightforwardly compositional: 'inter-' means between or among, and 'professional' already means relating to professions.
Etymology
Interprofessional comes from the parts inter- meaning 'between', as in international, and professional meaning someone trained for a 'profession' or job. So interprofessional describes people from different professions working together.
