The noun is an understandable clipping of 'Siamese cat', but the standalone breed meaning is lexicalized rather than fully predictable.
Etymology
Siamese for the cat is named after Siam, because the breed first came from that country; a Siamese cat is therefore a cat 'from Siam' known for its blue eyes and pale coat with darker points.
